Our Honey

It is the result of careful, small-batch harvests that preserve the purity and flavor of each varietal. We pride ourselves on producing a range of unique honeys, each with its own distinct flavor profile, harvested from the blossoms of native trees and wildflowers. From the bold, slightly tangy notes of Sourwood to the delicate sweetness of Clover, we offer a collection of honeys that reflect the rich biodiversity of our area. Our signature varieties include:

  • Sourwood
  • American Basswood
  • Blackberry
  • Tulip Poplar
  • Black Locust
  • Clover
  • Summer & Spring Wildflowers

Blackberry

This honey is collected from the blossom of wild blackberry bushes that grow all over the fields and mountainsides. A dark amber honey that has a fruity finish with a hint of berry.

Tulip Poplar

These giant blooms produce a very dark and abundant nectar that the bees love. Customers are shocked when they try this honey and love its thick smooth feel and caramel and molasses flavor that is a real favorite.  Blooms in May and is also the State tree of Tennessee. Because it rained so often in early may when this blooms, 2024 was not a good production year for this honey and isn't available. Fingers crossed for 2025.

Sourwood

This honey as the name suggests has a "tangy" finish. Its definitely not sour- it is sweet and floral. The Sourwood trees bloom in July and grows best in the Southern Appalachian Mountains. This varietal honey has won  "worlds best tasting".

American Basswood

In early June the Basswood trees are in full bloom along with many other species. Making this varietal very elusive to keep separate. It is very light colored and has a minty smooth finish.

Clover

White clover honey has a sweet floral taste. It is a favorite for brightening up tea, yogurt or mead making.

Black Locust

A very light and mild honey.

Wildflower

A wildflower honey has a lot of different floral sources. This adds pollen from a wide array of plants providing the most allergy benefit. The honey is sweet and goes good with everything. It changes from year to year depending on what was blooming best for the bees.

Comb Honey

We have 4"x2" and 4"x4" containers of comb honey.

It is raw honey in its purest form. Its the ultimate taste of summer!
