We carefully monitor our honey crop while the bees are gathering the nectar to determine which species of flowers the bees are visiting the most. If the bees mainly focus on one species of flower, then a "varietal" honey is produced. If the bees collect nectar from many flower species it is characterized as "wildflower" honey. There are a total of 1500 different species that bloom in our area. But the bees have a few favorites!
These giant blooms produce a very dark and abundant nectar that the bees love. Customers are shocked when they try this honey and love its thick smooth feel and caramel and molasses flavor that is a real favorite. Blooms in May and is also the State tree of Tennessee. Because it rained so often in early may when this blooms, 2024 was not a good production year for this honey and isn't available. Fingers crossed for 2025.
This honey as the name suggests has a "tangy" finish. Its definitely not sour- it is sweet and floral. The Sourwood trees bloom in July and grows best in the Southern Appalachian Mountains. This varietal honey has won "worlds best tasting".
This honey is collected from the blossom of wild blackberry bushes that grow all over the fields and mountainsides. A dark amber honey that has a fruity finish with a hint of berry.
In early June the Basswood trees are in full bloom along with many other species. Making this varietal very elusive to keep separate. It is very light colored and has a minty smooth finish.
A wildflower honey has a lot of different floral sources. This adds pollen from a wide array of plants providing the most allergy benefit. The honey is sweet and goes good with everything. It changes from year to year depending on what was blooming best for the bees.
We have 4"x2" and 4"x4" containers of comb honey.
